Almond Rocky Road

There is indeed a delight to incorporate all my favourite ingredient into one recipe. So it’s the Rocky Road! with lots of nuts, marshmallows and off course the chocolate! This tastes even better than the one that you have in the market. Best part is that a rocky road can be had anytime of the day. It could be dessert after your supper or even goes well with your tea. It’s a great snack to be packed for your kids tiffin so that they can also have a treat.

Honestly, the taste of marshmallows, nuts and chocolate are really delicious. It’s some sort of energy snack.

So here we get started by first beating the biscuits with a rolling-pin till they are crumbly.

Chop the almonds roughly. Also, you could beat them with a rolling-pin.

Heat the butter in the pan. Melt the chocolate in it. Add scrumptious honey!

Reserve a cup of this sauce.

Now put all the crunch stuff! The biscuits, almonds and of course my favourite Marshmallows. Give them a nice stir.

Bring the mixture and spread it smoothly over a foil. Pour the reserved chocolate sauce on top and make it more even.

Now dust some icing sugar on top of the Rocky Road and cut into pieces.

This has become a hot favorite in my family!!

Cooking time: 15 minutes, Preparation time: 2 hours/overnight refrigeration

Makes 12 bars

For this I used:

300 gm Dark Chocolate

125 softened unsalted butter

200 gm tea biscuits

100 gm almonds

3 tbsp honey

100 gm marshmallows

2 tsp icing sugar


Get started with putting the biscuits in a plastic bag and crush them with a rolling-pin untill it is crumbly with a little big and small pieces.

Now, Heat the butter, add the dark chocolate and some honey. Keep stirring. Keep aside 125 ml of melted chocolate in the a bowl.

Fold the biscuits and almonds in the melted chocolate mixture and throw in the marshmallows.

Tip the mixture onto a foil and smoothed it out.

Pour the reserved chocolate mixture on top with a wet spatula.

Refrigerate for about 2 hours or overnight.

Dust some icing sugar over it and cut into pieces.

Christmas Rum Balls Pudding

Its christmas time and I see its decorated everywhere. Its beautiful. I just love the carols playing everywhere. Besides the decorations, there is enormous variety of exquisite food available on the streets, malls and markets. It is actually to die for. But for me its a habit that I try different food stuff when I go out and try to reproduce at home. It feels a sense of achievement after I have done so.

This time I ate amazing cakey fruit balls. I had to try these since it was so festive. These are amazingly delicious cakey rum balls. There is a yummy chocolatey cake combined with rum which gives these balls an extra yummilicious taste to it. White chocolate along the cherries as the icing gives an extra flavor to the balls. The taste of these balls gave me hint of a plum pudding. Its velvety smooth crumble balls.

For this I simply crumbled the chocolate cake. This is going to be little messy in the following stages but it’s totally worth it!

Adding some golden syrup and the most important Rum!!

Mix the melted Milk Chocolate to this mixture.

Combine well with your hands. Messy isn’t it!!

Roll them into balls.

Add the melted white chocolate on top of the balls.

Decorate with glazed cherries.

Now Serve these Rum Balls in the Most Festive Style!!!!

Our Goa Trip

You must be wondering where I had disappeared for some time. All apologies for not mentioning and writing earlier but we had gone for a short vacation to Goa. It was all unplanned. Sometimes it actually great to go for a holiday without planning. We had an awesome time as we just decided there at the moment what we should be doing next. The best part of the trip was it was totally relaxing and not bounded by sight-seeing or shopping.

We were on a six-day vacation and there was nothing to do but just relax.  JS and I being morning person, love to go for walks in the morning. Walking along with the serene sea was absolutely calming and relaxing. The sound of the waves in sea mingled with beautiful sound of the birds forced me to do some meditation right there. Meditating with the hills by my side and sea merging with the sky and listening to beautiful chants of the birds was heaven. Just sitting with my eyes closed, warm breeze flowing by, I didn’t realise how long it had been.

The white sand beaches in South Goa, absolutely mesmerised me with sunshine during the day. The hustling bustling beaches with a mix of Russians, Britishers and Indians, all admired the beauty of Goa.  Taking a dip into the sea seems as if the sea is inviting us into its own world where there is more control of the sea over you than yourself. The water gushes into the core of the sea pulling us and the sand, then pushing us back again to the shore. The game is really fun. Take a dip, play with the water and get back to your beach chair and relax. Along the beaches there are small tables where they sell coconut and fresh juice. It is ideal to spend the whole day on a beach when you just wanna relax.

As in the evening the sun goes down. The glimpse of the golden sun changes to bright orange merging with dark clouded blue sky. It seems the water reflects into the sky. The colors are truly amazing. The water in the sea recedes back and prepares itself for the morning to hit the beach with a stride.

There are small streets and open flea markets everywhere. The streets get lively during the evenings. A ride on a bike is an ideal thing to do there.  To eat out at night, shacks on the beaches serve amazingly delectable grills and Indian food. There is a wide variety of fresh sea food to choose from, being lobsters, prawns, pomfret, red snapper, crab etc. For whatever days I was there, my two meals were guaranteed seafood. As I came back and realised the goan food had actually made gain a few kilos. Every shack we visited served some delicious food, cocktails and desserts, not to forget their speciality cheese garlic naan. One thing is for sure Goa has scrumptious food to offer for every taste. Not only the food, it also has great night life. Its most popular club Tito’s is favourite amongst every tourist.

With all the food and the scenic beauty of GOA, the trip was completely relaxing and great get away from our daily routine. We really rejuvenated ourself and had the most memorable trip.

Orange and Chocolate Chip Cookies

When I started reading novels during school, I remember I used to keep a bag full of cookies besides me. It has been important to keep a munching bag while reading. Its like eating pop corns while watching a movie.

Cookies! is something I have everyday with my cup of tea in the evening. There is nothing better than the homemade cookies. Now being the season for oranges. I had to try an orange one. Oranges bring out great flavour in any recipe I use. If you love orange you will certainly love these with a combination of chocolate.

This recipe is from Diethood. Kate has been dear friend also quiet helpful with her recipes. Her blog is very interesting to as it has alot of baking, which atleast I am addicted to.

Since I am not a huge fan of white chocolate, I used milk chocolate instead. The results were too good!! A must try!

So here we start making the cookies!…

It takes about 12 minutes to bake and 30 minutes to prepare. So its quite quick.

(makes about 2 dozen)

You will need:

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 cups milk chocolate chip
  • 2 tablespoons orange zest


  • Preheat oven to 190 0C.
  • Line two cookie sheets with parchment paper.
  • Whisk together flour, baking soda, and salt; set aside.
  • In the bowl, mix the cream butter and sugars until light and creamy.
  • Now beat in egg and vanilla until smooth.

  • Stir in orange zest!! (for a refreshing taste)

  • Add in the flour mixture,  into batches, until well combined.
  • Now some milk chocolate chips!!

  • Take some cookie dough in your hands and roll it into a small ball. Now, press it into a round shape.
  • Place the cookies on the parchment sheet.
  • Bake 10 to 12 minutes or until golden brown around edges.
  • Cool for 2 minutes on cookie sheet before transferring to rack to cool completely.
  • Store in airtight container. (Important: As cookies may become a little soggy if not kept in an air tight container.

I loved the taste of orange with millk chocolate!! Yummy!!
